Carrot cake muffins are officially my new favourite things to bake! It is actually so delicious and divine that I wish I could bake them everyday, which I probably could but also not the best idea (health reasons).

I baked them for the very first time the other day and I am so glad that I did. They turned out very well even on the first try and as usual, I learnt another lesson about baking; muffins don’t rise as much as cupcakes tend to, for some weird reason.

Either way, I am obsessed with this recipe and how easy it is and cannot wait to bake more for the weekend. They are really good and so simple and easy, definitely recommended to bake them for afternoon tea and coffee with some friends on the weekend. And also not a very expensive baking recipe, especially if you already have most of the baking ingredients such as cake flour, vanilla essence, baking soda, etc.

Video for this one is coming soon, for now I shall write the best carrot cake muffin recipe in my journal. Please try this out and definitely let me know what you think because as someone who is not a big fan of carrot cake in general, these are absolutely superb.

One quick tip, is to fill the muffin/cake holders almost up to the top, but not exactly to the top. Definitely pour the batter more than halfway for this recipe, in order to gain more substance in your muffins. I also want to add that homemade is most of the time better than store bought as you know exactly what you are putting in it and how much of each thing.

Now go bake some muffins and enjoy!
