I cooked burritos for the first time in my life and I am absolutely not disappointed with the results. Since having a cooking playlist on my YouTube channel, I realised I have the complete freedom and flexibility of cooking meals and different culture cuisines more than I would have if I didn’t have a channel. I am not implying that I am only experimenting with different foods solely because of the channel, but having a channel requires me to be creative and stretch out of my comfort zone, which is really good for self-growth.

I had no idea how my very first burritos would turn out but I am so pleased that nothing went wrong and that they turned out completely delicious. I really was generous with the filling, almost over filling it, but if I hadn’t, it wouldn’t have turned out to be one of the greatest things I have ever cooked. It really appears that the more I cook and experiment, the better I am getting at it.

I will correct one thing that I didn’t do that I should have done; I should have mixed the bean mix with the rice instead of keeping separate. But now I know for next time that I shouldn’t separate the rice and bean mix while filling the burrito up, and also to prepare more ratio of bean mix.

For those just getting into cooking or those who live alone who want to meal prep or want to cook something really good but for one person only, this burrito recipe is perfect for you! It’s super easy (if I can cook it well, so can anyone else), super delicious and all round will become your favourite protein/carb/veggie meal, if you want to eat more of that, like I do.

I know that this is going to become my favourite Friday cheat meal. The best part is, I looked on Pinterest for the basic step-by-step, as I have never cooked this before, and ended up not following a direct recipe but instead came up with my own one, which I think is very evolved of me, in terms of cooking meals on Wild Reverence channel. So, with that, I hope you enjoy, I hope yours turns out as well as mine did and don’t forget that you can add your own touch and different ingredients, as it’s a flexible dish!

P.S. Remember to try fill it just the right amount because you don’t want too little filling but you also don’t want to not be able to fold it when it comes to folding time, and you definitely don’t want it to break halfway through toasting it in a sauce pan.

Mexican Burrito Recipe

Ingredients

  • One pack of burritos (flour tortillas)
  • An onion
  • 2 Tins of black or dark beans (I used a three bean mix which was just as delicious)
  • 1 or 2 Tins of tomato and onion mix
  • A pack of meat of your choice (I used strips of beef which was chopped up into small pieces)
  • 2 Cups of rice
  • Guacamole
  • Grated cheddar cheese
  • Coriander leaves
  • Paprika spice, chili flakes, sweet basil, mixed herbs etc. (Add the desired amount)
  • A dash of Tobasco (optional)
  • Lemon juice (optional)

Recipe

  • Start off by cooking your two cups of rice for 20-25 min.
  • Once you have diced your chosen meat (mine was beef cubes) and your onion, place them in separate pans or pots with oil.
  • Add your beans and tomato and onion mix to the pan of cooking onion after the onion has toasted a little.
  • Spice your meat and beans as they cook.
  • Make sure every bit of meat is cooked properly, you don’t want to get sick!
  • Let the pan of beans simmer for about 5-10 minutes to let the sauce come together.
  • Strain your rice once it’s cooked.
  • Wash the coriander leaves and chop them up into small bits and add them to the rice.
  • Grate your cheese or prepare the cheese that’s already grated.
  • Once everything is cooked, you can prepare the burritos to be filled.
  • I suggest you mix a good portion of rice with the saucy beans and tomato mix so that you can get more flavours pulling through once you start eating it, but you can keep them separate.
  • Start off with putting your and bean mix in the middle of the burrito.
  • Add guacamole with a knife and spread it evenly along the rice (or you can start with spreading the guacamole first if you like).
  • Add your meat if you cooked any, another layer of something.
  • Lastly, add a nice amount of grated cheese on top of everything.
  • Fold it up the way you want, I don’t think I can explain into words how to fold it but you can soon check on my YouTube channel how I did it. Try not to let the burrito tear or break.
  • When you are done folding it, you can toast the side where it could open on a pan for a bit, just to warm it up and help melt the cheese.
  • Once you are done with that, your delicious burrito has been cooked and is ready to serve!
